I flipped through one at culinary school once, might have been this one (in fact it probably was). Its pretty interesting. Of course most culinary schools revolve around french cuisine, which of course has its roots in the methods of cooking used in this and similar books.
Theres a reason that there are some 20 something sauces, as well as mother sauces, and gravies! They are about flavor now, but back then it was to cover up spolied meats and veg. Definitly fun to read and learn though. There was a medieval to rennaissance reenactment group I used to tag around with off and on some years ago that cooked alot of these kinds of old recipes and they arent all that bad. |

I like the part that says "chicks should be suffocated alive" as opposed to what?...... suffocated after they're already dead?? WTF?? :504:
